- 450g Good quality frozen baby peas
- 1/2t salt, plus extra to taste if needed
1. Bring 3C water to boil in a saucepan. Add peas, cover, and bring back to boil. Boil them for 1 minute. 2. Drain through a sieve set over a bowl; reserve the cooking liquid. 3. Put peas and 1/2t salt into heavy duty blender with 1 and 1/2C of the cooking water. Blend for 5-10mins (if in doubt, blend more). 4. Then refine by straining back into a saucepan through a very fine sieve. Push through with a silicone (bendy) spatula. You will be left with a grainy mass of pea solids in the sieve - discard. 5. The remaining soup in the saucepan should be perfectly smooth and silky. Optionally add a couple of pieces grilled prosciutto to garnish.
