Two alternatives to mashed potato


Autumn is just the time for mashing. Get 'your results on a plate' with these great alternatives to the classic mashed spud. So lay your table with these quick to prepare sides - carrot & parsnip mash, and cauliflower mash.

Cook Time: 15 minutes


  • For the carrot & parsnip mash
  • 300g parsnips, peeled
  • 2 carrots, peeled
  • 3T olive oil
  • 1T fresh thyme
  • salt & pepper, to taste
  • For the cauliflower mash
  • 1 large head cauliflower
  • 1/4C parmesan cheese
  • 1/4C milk or cream
  • 1 garlic clove
  • 2t chives
  • 3T olive oil
  • salt & pepper to taste

*For the carrot & parsnip mash* 1. Dice both parsnips and carrots and add to a large pot of boiling water. Boil for 12-15 minutes, or until fork tender. 2. Drain the carrots and parsnips and place in a food processor. Add olive oil, thyme, salt, and pepper. 3. Pulse until combined. *For the cauliflower mash* 1. Do as above with the cauliflower. Drain and add additional ingredients. Pulse until you've formed wonderful creamy goodness.
