Lentil, Haloumi & Mint Salad

Try this tasty salad on a hot day to refresh and revitalise. The minty aroma helps beat stress and depression, so what a great treat for your lunch – stop and breathe before devouring.

Cook Time: 10 minutes


  • 2 X 400g Brown lentils, tinned
  • 1 small red onion, diced
  • 1 short cucumber, diced
  • 2 tomatoes, diced
  • 1/2C fresh mint, shredded
  • 1&1/2t lemon juice
  • 1T olive oil
  • 250g haloumi
  • 1/2C pumpkin & sesame seeds, toasted

1. Rinse lentils in colander 2. Add all diced veg plus mint to a large mixing bowl 3. Mix in lemon juice and olive oil 4. Slice the haloumi and either grill (place on baking paper) or pan fry (turn when golden) 5. Sprinkle the nuts over the tossed salad and add Haloumi
