Anne's Apple Spice Muffins

I often make a batch of these on a Sunday, put them in the freezer and eat one a day for an afternoon snack. A batch lasts over 2 weeks. One of these little muffins at 3-4 o'clock in the afternoon takes me through to dinner.

Prep Time: 10 minutes

Cook Time: 15 minutes


  • 2C almond meal
  • 4 eggs
  • 1C stewed apple, unsweetened
  • 60g butter
  • 1T cinnamon
  • 1t allspice
  • 1t ground cloves

1. Pre stew your apples (Granny Smiths work best). 2. Melt butter and mix with all other ingredients. 3. Cook at 180 for 12-15 minutes. Makes 12 small muffins.
