Bake Sensation

This family favourite will feed the troops and have enough left for lunch the next day. Don't forget to add the eggs like Chef Ramsey once did.

Ingredients:

  • 2 large kumera
  • 1 medium potato
  • 600g premium minced beef
  • 1 red capsicum
  • 2 courgettes
  • 1 head broccoli
  • 3 stalks silverbeet
  • 6 eggs
  • knob of butter

Instructions:
1. Boil and mash the kumera and potato with knob of butter. 2. Cut up the head of broccoli and the silver beat, and steam. 3. Pan fry the minced beef. When cooked add 1 chopped capsicum and 2 chopped courgettes. Season to taste. 4. Add all ingredients except the kumera and potato mix to a baking dish then drizzle 6 whisked eggs over the top. 5. Use the mash to add a top layer and bake for 10-15min at 220 degrees. Grill for few mins at the end if you like the top crispy.
