Basics are Best

A dish for those in a hurry, or who hate cooking.... or both.

Prep Time: 15 minutes

Cook Time: 1 hour

Ingredients:

  • 2 kumera, large dice
  • 2 carrots, peeled and sliced
  • 2 parsnip, peeled and diced
  • 1 capsicum, sliced
  • 1 head of broccoli
  • 1/2 head of cauliflower
  • Olive oil, drizzle
  • 3 chicken breasts
  • salt and pepper, to taste

Instructions:
1. Add all vegetables (except broccoli & cauli) to roasting dish, drizzle with oil and season. Roast 35 mins at 180 deg. 2. Add broccoli and cauliflower, cook for further 5-10 mins. 3. Pan fry chicken - season to your liking.
