If you've just gotta have dessert, give this a try.
Prep Time: 30 minutes
- 1 egg white
- 1t vanilla bean paste
- 500g unsweetened natural yoghurt
- 250g punnet strawberries, hulled, then chopped or blended
1. In a small bowl, use an electric mixer to beat egg white until soft peaks form, add vanilla bean paste until combined. 2. In a large bowl, combine yoghurt & ¾ of the berries. Fold the egg white mixture through. Freeze for 2 hours, until set. 3. Break up the frozen mixture with a spoon. Use an electric mixer, beat well until smooth. 4. Line a pan with plastic wrap. Spoon mix into the pan, cover and freeze overnight. 4. Serve in scoops topped with extra berries.
