Ceviche

When you find fantastic fresh fish you want to know what's the best-something to do with it. This is what you do. As an option you could use prawns or other seafood if you prefer.

Ingredients:

  • 500g fresh fish fillets (firm fish)
  • 8 Limes, freshly squeezed juice
  • 2 large tomatoes
  • 2 large ripe avocados
  • 1-2t red chilli flakes
  • Salt & pepper, to taste
  • 1/2C fresh coriander, chopped

Instructions:
1. Cut fish into bite sized chunks, put in glass dish, and dress with the lime juice. Leave minimum 3 hrs or overnight. 2. Cut the tomatoes and avocados into 1/2cm cubes. Roughly done is fine. Add them, the chilli flakes, and the coriander to the bowl with the fish. Mix gently by hand. 3. Add salt and pepper to taste. Serve chilled.
