Chick Pea Salad


Prep Time: 15 minutes


  • 1/2 a telegraph cucumber
  • 1 can of chick peas
  • 4 or 5 medium tomatoes
  • handful fresh coriander
  • handful fresh parsley
  • 1T olive oil
  • 1T of lemon juice
  • feta cheese (to taste)

1. Chop the cucumber and tomatoes, into small small bite-size chunks. Finely chop the coriander and parsley. 2. Drain chick peas and mix with cucumber, tomatoes, coriander, and parsley in a bowl. 3. Combine olive oil and lemon juice and mix into salad. Crumble feta over the top of the salad. 4. Cover and leave for an hour at room temperature before serving.
