Coconut, Kale & Ginger juice

Sometimes for whatever reason you just can't face a full breakfast, but you know you shouldn't skip it. Adding a home made juice or smoothy occasionally can be an excellent way to bolster your intake of nutrient-rich fruits and veggies. This shouldn't become a permanent substitute for a whole-food based breakfast though.

Yield: 1

Ingredients:

  • 4-6C fresh kale, torn
  • 2 granny smith apples
  • approx 125ml coconut water (or just water)
  • fresh ginger root (small piece to taste)
  • Optional:
  • 1/4 avocado
  • mint leaves

Instructions:
Combine all ingredients into a juicer and juice away.
