Crunchy Kumara and Cashew Salad

For when you're tired of plain old kumera - like that would ever happen

For Salad:

  • 600g kumara
  • 3-4 stalks chopped celery
  • 1/2C roasted cashews (or your choice of nuts), roughly chopped
  • 1/2C chopped dates
  • 2 finely sliced spring onions
  • 1/4C chopped fresh coriander
  • 1 and 1/2C chopped baby spinach

For Dressing:

  • 3T mayonnaise
  • 3T plain yoghurt
  • 2T orange juice
  • 1t grated orange zest
  • 1/2t curry powder

1. Peel kumara and cut into 2-3cm dice. Boil until tender (7-10mins). Drain and leave to cool to room temperature. 2. Combine all dressing ingredients in a small bowl. 3. In a large bowl place the cooled kumara and the remaining salad ingredients. Pour in dressing and toss gently to combine. Season to taste. 4. Serve garnished with a little extra chopped coriander.
