These are an awesome Sunday morning recipe, and are really easy to make. They're delicious plain, or even more awesome with toppings such as toasted coconut or fruit.
Prep: 5mins| Cook time: 10mins
- 1 large banana
- 2 eggs
- natural vanilla essence
- olive oil
- Mash banana well with a fork, crack eggs on top and whisk in to banana.
- Add a dash of cinnamon and vanilla essence and mix.
- Heat pan on stove and add a little olive oil. Add spoonfuls of mixture to the pan and cook, turn when bubbles start to form on the top of the raw side. Serve!
