Healthy Banana Pancakes

These are an awesome Sunday morning recipe, and are really easy to make. They're delicious plain, or even more awesome with toppings such as toasted coconut or fruit.

Prep: 5mins|  Cook time: 10mins

Ingredients:

  • 1 large banana
  • 2 eggs
  • natural vanilla essence
  • cinnamon
  • olive oil

Instructions:

  1. Mash banana well with a fork, crack eggs on top and whisk in to banana.
  2. Add a dash of cinnamon and vanilla essence and mix.
  3. Heat pan on stove and add a little olive oil. Add spoonfuls of mixture to the pan and cook, turn when bubbles start to form on the top of the raw side. Serve!
