Lemon Coconut Balls

These lemon balls can be frozen and keep well. Enjoy them as a treat straight from the freezer.

Prep Time: 25 minutes

Yield: 30

Ingredients:

  • 1 and a 1/2C unsweetened dessicated coconut (plus ½C for coating if you choose)
  • 1C almond meal
  • 4T coconut oil
  • 4T honey (or agave syrup)
  • zest and juice of one lemon
  • 1t pure vanilla extract

Instructions:
1. Mix all ingredients, roll into little balls (approx. 30), then freeze.
