Quick and easy Mushroom Salad

Exactly what it sounds like - quick and mushroomy


For salad:

  • 400g button mushrooms, chopped in half
  • 400g spinach, washed & chopped
  • 1T coconut oil
  • 1/2C fresh flat leaf parsley

For Dressing:

  • 1T tahini
  • 1T tamari
  • 1/2T maple syrup
  • 1/2t white sesame seeds
  • 1/2t black sesame seeds

1. Mix all dressing ingredients together in a small bowl. 2. Fry mushrooms in the coconut oil over a high heat until browned and wilted. Remove from heat, and let them sit is their own juices. 3. Add dressing to mushrooms and toss through. 4. Serve on a bed of the wilted spinach.
