Quinoa Crusted Salmon

Get these two superfood heavy hitters on the plate together, and know that you've got some intense nutrition coming at ya.

  • ½C quinoa, cooked
  • 1C fresh dill
  • 1C fresh Italian parsley
  • juice and zest of 2 lemons
  • ¼C capers, finely chopped
  • 1kg salmon fillets, skin on, boned and cut into portions
  • Salt and pepper

1. Preheat oven to 180 degrees. In a bowl combine half of herbs with quinoa, lemon zest, juice and capers. 2. Lightly grease oven tray and place salmon skin side down. Season. Press quinoa mixture onto salmon. 3. Bake in oven for 15 mins or until salmon is cooked to your liking. 4. Remove from oven and sprinkle with remaining herbs to serve.
