Quinoa Superfood salad


This salad is so-named because it has three high potency and nutrient dense superfoods in it; quinoa, almonds, and beetroot. Not to mention garlic honey and lemon. This salad is ideal for boosting your immunity and staving off a cold or the man flu.

Prep Time: 5 minutes

Cook Time: 15 minutes

Yield: 4-6


  • 450g red quiona
  • 2 cooked beetroot, cubed
  • 100g feta cheese
  • 1 C almonds, sliced
  • Large handful of basil
  • For the dressing
  • 2 Lemons, zest & juice
  • 4 cloves garlic, crushed
  • 3 T honey
  • 1/3 Cup Olive Oil

1. Cook quinoa as per packet instructions. 2. Mix dressing ingredients together. 3. Combine cooked quinoa with all other ingredients. 4. Pour over the dressing and stir through.
