Zucchini rounds with sun-dried tomatoes and goat cheese


In a pinch and having guests around? Then these little beauties will save your life. Easy, quick, cheap, and super tasty.

Yield: 8 servings (3 rounds per serve)


  • 2 zucchini
  • 1/4t sea salt
  • 1/4t freshly ground black pepper
  • approx 24 sun-dried tomatoes, packed in oil
  • 100g goat cheese
  • 2T fresh chives, chopped
  • 2T extra-virgin olive oil

1. Slice zucchini into 1/4-inch-thick rounds. (You should have about 24 slices.) Lay out on large platter; season with the salt and pepper. 2. Place a sun-dried tomato on each slice, then top each tomato with a pinch of goat cheese. 3. Sprinkle tops with chopped chives, and drizzle with extra-virgin olive oil; serve.
