Raspberry Cacao Energy Bites

Sometimes you just want a tasty, healthy, quick snack to grab on the way to your next adventure. These energy bites are a super easy, nutritious snack to grab and take on the go! They have the perfect amount of sweetness without any added sugar, along with protein and healthy fat to fill you up and power you through the day.

  • 1 cup raw almonds

  • 1/4 cup + 2 Tbsp. creamy almond butter

  • 1 cup freeze-dried raspberries

  • 1 cup Medjool dates, pitted and chopped

  • 1/4 tsp fine sea salt

  • 1/3 cup raw cacao powder

  1. Add almonds, dates, raspberries, almond butter, and sea salt into a large food processor and pulse several times. (If you have a small food processor, divide ingredients in half and make two batches).

  2. After ingredients are somewhat chopped, switch from pulse to process and continue until very crumbly.

  3. Gather a small handful, about 2 Tbsp's, and form/roll into a small ball. Repeat with all of the mix.

  4. Once balls are all formed, gently roll them in a shallow dish of cacao powder.

  5. Refrigerate any extras in an airtight container. Enjoy!

  1. The moisture content of dates can vary - if your mix isn't sticking together enough to form balls, add a couple more dates or a 1/2 - 1 Tbsp almond butter and process again until well blended.

  2. I have a 14 cup food processor that worked perfectly for this recipe. If you have a smaller one you'll need to cut all the ingredients in half.
